Chicken Fajita Jacket

- 2 tbsp olive oil
- 1 Chicken breast, cut into strips
- 1 red pepper, sliced
- 1 white onion, sliced
- 1 yellow pepper, sliced
- 2 tbsp Fajita Seasoning


Heat the oil in a frying pan. Tip in the chicken, peppers and onions with the Fajita seasoning.

Cook until the chicken is cooked through and the onion and pepper has become soft.


Place on top of a cooked through jacket potato. Top with sour cream and grated cheese.
