Hot Exotic Fruit Salad

- For the fruit:
- 2 large ripe mangoes, peeled and cut away from the stone, or 2 large tins
- 2 grams x 565 tinned lychees, drained
- 2 large pineapples, peeled and cut into chunks
- 2 just-ripe pawpaws, peeled, deseeded and cut into slices
- 8 passion fruits, halved
- 8 bananas, peeled and cut on the diagonal
- For the syrup:
- 350 grams granulated sugar
- 2 star anise
- 2 Bay Leaves
- 2 Cinnamon Sticks
- 20 grams Ground Ginger
- 2 oranges, grated zest and juice
- 3 limes, grated zest and juice


For the syrup, place all of the syrup ingredients, except the orange and lime juice, in a saucepan, along with 1. 2 litres of water.

Place over a low heat until the sugar has dissolved. Increase the heat and simmer for 5 minutes. Cool slightly and add the orange and lime juices.

Place all the prepared fruit into 10 bowls, pour the prepared syrup over and serve.
