Monkfish carries strong flavours

Herbs taste gorgeous with monkfish

Seafood dishes can offer professional caterers a great deal of scope for creativity - which means they could be used to make sure that your restaurant's offerings really stand apart from the crowd.

In an article for the Guardian, celebrity chef and author of the Spanish Flavours cookbook Jose Pizarro recommended a roasted monkfish with serrano ham, black olives and thyme.

"Monkfish can carry other strong flavours easily - and this combination is stunning," he explained - which means that it is perfect for the inclusion of culinary herbs and spices!

Here at Schwartz for Chef, we really advocate culinary innovation - so while Mr Pizarro recommended the use of thyme, why not try something new and exciting of your own invention?

The possibilities are almost endless - so there is no need to be afraid of trying to throw ingredients together that might not strike you as being obvious inclusions.
