Thyme used in shortbread recipe

Use thyme in cheese shortbread

Fans of adventurous recipes who want to try incorporating herbs into biscuits may wish to follow the advice of one expert and try parmesan and thyme shortbread.

Professional chef Diana Henry, who presents the daily television show Market Kitchen on the Good Food Channel, recently shared this sweet with the Telegraph.

To prepare, she advised creaming butter until soft, then adding all remaining ingredients - flour, grated parmesan, olive oil, cayenne pepper and thyme.

Ms Henry then instructed people to pull this mixture together and form it into a large sausage shape before refrigerating for an hour.

Prior to putting it in the oven, she recommended cutting the shortbread and placing on a large baking tray, leaving enough room for the mixture to expand while heating.

She specified the resulting food should appear soft and golden brown and should not be moved when still fragile.

Recipe ideas by Ms Henry appear regularly in magazines such as Red and Waitrose Food. She was also named cookery writer of the year in 2007.
