Parsley and caper sauce powerfully delicious

Parsley makes a powerfully delicious sauce for pork

Culinary herbs such as parsley can add "spicy freshness" to a caper sauce for pork.

This is according to Rose Prince, a chef who shared some of her flavour ideas for autumn in the Telegraph.

She claimed that her recipe for parsley and caper sauce is a great main meal with pork for a dinner party and could be served hot or cold.

"The tiny whiff of anchovy in the sauce transforms it into something that is powerfully delicious," Ms Prince remarked, noting that while the sauce was an optional condiment, it brings out the flavour of the pork.

To make the sauce, she recommended mixing a large handful of parsley with four boiled eggs, black olive puree, anchovy fillets, olive oil and a tablespoon each of capers, cornichons and green olives.

Ms Prince has written five cookery books, the latest of which, Kitchenella, was shortlisted for a Galaxy award.
