Why not try cinnamon lentil cakes

Cinnamon can make great snacks

One great way for professional caterers to offer something distinctive and unusual on the starter section of their menu is to serve a range of snacks in a tapas style arrangement.

This does not necessarily need to restrict itself to Spanish cuisine either - indeed, our resident expert Chef Steve says that taking cues from other culinary traditions is one of his key professional inspirations.

Co-creator of the Moveable Kitchen and the owner and head chef of the Dock Kitchen in Notting Hill Stevie Parle suggested preparing crisp cinnamon lentil cakes.

In an article for the Daily Telegraph, he explained that this recipe was inspired by a Sri Lankan snack.

A wide range of culinary spices - including chill, cumin and ginger - all formed a part of the preparation process.

However, why not take a really adventurous approach and try to come up with a new set of flavour pairings of your own invention?
