Cloves spice up a ham sandwich

Prepare a ham joint with cloves for several rounds of satisfying sandwiches

Gourmands looking for new flavour ideas for old favourites such as a ham sandwich could try using dill pickles.

This has been suggested by owner of the Hix Oyster & Chop House Mark Hix, who revealed his recipe for this light bite in the Independent.

He advised preparing the ham from a joint by studding the meat with cloves and spooning honey over it before baking.

"A joint of ham is still a good-value cut whether you boil or roast it, and the flavour hot or cold is second to none," the celebrity chef remarked.

When this is done, he advised toasting bread and spreading with a mixture of mustard and mayonnaise.

Hix's serving suggestion was to add dill pickles and to the slices before finishing off with an extra spoonful of mayonnaise.

Professional chef Reza Mahammad recently recommended the sauteing of cloves in order to make a Rajasthani lamb curry.
