Chilli and paprika contribute to a lemon sauce for steak

Steak can be served in strips with lemon sauce

Cooks looking for flavour pairings to serve a different kind of steak flavour may wish to try a preserved lemon sauce.

This has been suggested by Yotam Ottolenghi, who shared the recipe for the dish in the Guardian.

He started by grilling two large yellow peppers until they were charred all over, peeling and cutting into strips when cool.

Oil and garlic were then heated in a pan, before tomatoes, chilli, paprika, salt and pepper were also introduced.

Mr Ottolenghi then recommended adding the pepper after this mixture had cooked and simmered, along with lemon skin and parsley.

For the steaks, he advised brushing with harissa and seasoning with salt and pepper before leaving to marinade for over an hour.

The Ottolenghi Cookbook - his first publication - was released in 2008 and the chef is a regular contributor to the Guardian.

His final serving suggestion was to cut the steaks into strips, with sauce spooned over and a garnish of parsley.
