Spice up a pumpkin curry with salsa rojal

Spices are an essential addition to curry

Everyone knows that culinary spices are a hugely important inclusion in curries, as these add the characteristic heat to the dishes.

However, these ingredients can also be very useful in side servings that can be a key feature of this kind of meal.

Paul Gayler - executive chef at London's prestigious Hyde Park location the Lanesborough Hotel - suggested preparing a salsa rojal to go with a pumpkin curry.

In an article for the Daily Telegraph, he explained that "the curry is drier than you might expect [so] serve it with fluffy basmati rice or naan bread and my fruity salsa rojal".

His curry recipe included the likes of chillies, cumin, ginger, coriander and turmeric, while coriander was also a key ingredient in the salsa.

However, in order to really set your restaurant's offerings apart from the crowd, it may be advisable to come up with new flavour pairings of your own invention.
