Nutmeg is very British

Culinary spices offer a great deal to the professional caterer - and it really pays off to think of what they add to dishes.

Our resident expert Chef Steve says that researching other culinary cultures is one of his key professional inspirations - and there is no reason that caterers cannot apply this kind of consideration to traditional dishes.

Co-creator of the Moveable Kitchen and the owner and head chef of the Dock Kitchen in Notting Hill Stevie Parle said that nutmeg is a quintessentially British spice.

In an article for the Daily Telegraph, he added that this is despite the fact that it comes from some of the most tropical places on the planet.

The expert explained that this is "the spice of bread sauce, cauliflower cheese, creamed spinach and apple pie".

It could prove to be particularly popular at this time of year, as these are the kind of warming and comforting dishes that are often in demand throughout the winter.
