Coriander can create a tasty sauce

Chilli and coriander combine for an awesome sauce

There are so many things that professional caterers can do if they wish to bring something new and distinctive to their restaurant's menu.

Our resident expert Chef Steve says that one of his key sources of inspiration is researching the culinary traditions of other cultures.

So why not follow this approach and take some cues from the cuisine of other countries?

Celebrity chef Yotam Ottolenghi - who is preparing a new television series based on Turkish meals - recommended a roast squash dish to serve with chilli yoghurt and coriander sauce.

In an article for the Guardian, he explained that Turkey is "the country that gave us yoghurt, or at least the name, and some of the world's great chillies".

"This combines both," Ottolenghi added.

He went on to suggest that salt, pepper and cinnamon are also good inclusions - but the really adventurous chef could always add their own unique twist to the meal.
