Flavour bean stew with bay leaves

Bay leaves can flavour bean stew

Bay leaves are an Indian herb used in the preparation of a chorizo, morcilla and white bean stew recommended by owner and head chef of Notting Hill's Dock Kitchen Stevie Parle.

The celebrity chef shared his ingredients for the dish in the Daily Telegraph and advised the use of mongetas, or cannellini beans if these are not available.

First, the beans are gently heated in a pan of water with garlic cloves.

Chorizo and black pudding are cut into chunks and fried in olive oil until the pieces are browned all over, when morcilla and chopped garlic are added.

Tomatoes are then brought to the mixture, along with culinary herbs such as bay leaves and thyme.

Mr Parle's serving suggestion was to put a little salad and bread on the required number of plates.

Bay leaves were a recommended ingredient in a huevos rancheros recipe the celebrity chef recently revealed in an article for the same paper.
