Herbs can add to an unusual salad

One of the many benefits of culinary herbs is that they can be used in a wide range of dishes - anything from innovative soups to old favourites like roast meals.

Our resident expert Chef Steve says this is one of his favourite characteristics of the ingredients, as well as the fact that they can be used in exciting new flavour pairings to really make a dish stand out.

In an article for the Independent, celebrity chef Bill Granger recommended the use of basil, fennel and parley in a recipe for parmesan artichokes and broad-bean salad.

"I will confess that I don't prepare artichokes all that often, but when I do go through the effort of doing them, they have to be the star," he commented.

Professional caterers could offer their own take on this distinctive menu offering by trying different ingredients to complement the vegetable - or why not try some African spices?
