Culinary spices can mix up a dessert

Ginger can contribute to a great pudding

While culinary spices are usually associated with the preparation of main courses such as curries, they can also be applied to dessert recipes.

Indeed, McCormick's resident expert Chef Steve says this kind of versatility is one of his favourite things about the ingredients.

Celebrity chef Nigel Slater - writing in an article for the Guardian - made use of them in the preparation of white chocolate ginger crunch.

Preparation involved melting chocolate and pouring the liquid over crushed biscuits - which could be prepared according to taste in the kitchen.

The resulting mixture is then folded in with a variety of other ingredients, such as sultanas, pistachio nuts and orange peel, before being spread on a sheet of waxed paper and left to cool.

"An extraordinary confection, it is one that works incredibly well, lifting the cloying quality of the white chocolate while adding a touch of luxury," he commented.
