Herbs and spices are favourites of London chef

London chef favours herbs and spices

Dishes that contain herbs and spices are a firm favourite of one top London chef.

In an interview with Big Hospitality, Israeli-born Yotam Ottolenghi reveals what he prefers when it comes to the kitchen.

He studied at Cordon Bleu after moving to the UK in 1998 and he now runs four branches of Ottolenghi in the UK's capital.

And his love of fresh food which is flavoured with herbs and spices is set to arrive at his new Soho restaurant Nopi next month.

Speaking to the catering resource he stated: "At Nopi, there will be more meat and fish than in the Ottolenghis. We will still serve a lot of vegetables, though. I like fresh-tasting food with herbs, spices and bright colours."

Spices could prove a particular kitchen essential for Ottolenghi, who revealed his cuisine often focuses on Middle Eastern flavours.

His knowledge of how to properly use herbs and spices may have been compounded at his first job after Cordon Bleu, as a pastry assistant at Knightsbridge's The Capital, which he cites on his website as a character-building experience.
