Marion Batali shares his penne alla primavera recipe

Chef Batali shares pasta dish with basil and parsley

Home cooks interested in trying their hand at inspirational recipes should make top chef Mario Batali's rustic penne alla primavera, according to Eating Well magazine. 

The penne pasta dish, tossed with spring vegetables, including carrots, morel mushrooms, asparagus, peas and fava beans, is enhanced with an abundance of herbs, such as basil, parsley, freshly ground black pepper and mint.

With a preparation time of under and hour, the penne alla primavera is the "perfect example" of the US TV chef's Italian cuisine.

To start the process, cook sliced garlic cloves in a large pot until golden, reduce the heat and add carrots.

Once the carrots have gone soft, add mushrooms to cook for a few minutes, then add sliced asparagus stalks, the tips, peas, beans and scallions and leave on a medium heat until tender.

Finally, add cooked pasta and mix in all the herbs before serving with Parmigiano.
