dmAFRICA Try recipes from Accra for fun cuisines

Accras cuisine is fun and enjoyable

Adventurous travellers looking for creative cuisines have been advised to take a look at the African city Accra's "fun and enjoyable" culinary traditions.

Alan Brown, sales and marketing director of dmAFRICA, recommended dishes native to Ghana's capital, such as fufu.

"Fufu, the most widely served traditional dish, comprises balls of yam or cassava or plantain served with soup and a side dish of goat or fish," he explained.

TriniGroumet.com suggests serving fufu with its Saltfish Accra recipe, which sees battered fish flavoured with black pepper and Italian seasonings, such as basil, marjoram, oregano, rosemary and thyme.

Mr Brown further suggested: "Kyegbuma is based on crab meat - crabs and lobsters are plentiful and relatively inexpensive - served with potato balls, meat and cassava."

He went on to say that dishes made with ground nuts are also very popular in the region, while local chefs also make use of pineapple, mango, papaya, banana, oranges and coconut.
