Mustard and herbs can really set off a salad

Salads are a staple inclusion on the starter menu of almost any restaurant - so it can be difficult for caterers to come up with something that will really stand out from the crowd.

Our resident expert Chef Steve says culinary herbs and spices are fantastic ingredients, as they can bring something new to almost any dish.

In an article for the Independent, celebrity chef Mark Hix suggested making a salad from a base of leafy herbs like parsley.

He also suggested the inclusion of mustard to set off the key ingredients of beans and bacon.

However, why not try coming up with your own unique flavour pairings? This can almost guarantee the meal won't be offered anywhere else, so let your imagination run wild. This could keep diners coming back for more.
