Fennel and parsley create an aniseedy salad dressing

Fennel seeds and garlic can make a unique salad dressing

Culinary herbs offer a wide range of benefits to caterers - they can bring out the natural flavour of other ingredients, or they can be used to fortify a dish with an entirely new taste sensation.

Our resident expert Chef Steve says this is one of his favourite things about these ingredients - and it is also one of his key professional inspirations.

In an article for the Independent, celebrity chef Bill Granger recommended using fennel, garlic and parsley to create a salad dressing that is characterised by a distinctive, aniseedy flavour.

He used this creation to complement a warm potato, pepper and chorizo salad. He said that this meal is a modern classic - and his dressing makes it even livelier.

This just goes to show how you can really bring your own twist to a meal through judicious use of herbs and spices - and this attitude to innovation could really keep your diners coming back for more.
