African spices can flavour the most humble ingredients

Caterers who are considering new ways to make meat dishes stand out could try following the advice of one celebrity chef and give them a twist with African spices.

Hugh Fearnley-Whittingstall recommended the use of culinary spices including caraway, cayenne pepper, coriander, cumin and paprika when preparing a lamb liver meal in an article for the Guardian.

Indeed, McCormick's resident expert Chef Steve says one of the things he loves most about herbs and spices are their versatility, as they can be put together in a wide range of combinations and used to create both sweet and savoury recipes.

Preparation simply involves heating the meat at a high temperature in a frying pan seasoned with garlic, oil and the relevant spices, in addition to onion.

Fearnley-Whittingstall claimed the recipe "demonstrates just how great the results can be when you take well-produced, local ingredients - even pretty humble ones such as lamb's liver and onions - and give them a really imaginative treatment".
