Try Swedish recipes on a festive menu

Vegetables are essential at Christmas

The festive menu of many restaurants up and down the country is undoubtedly filled with traditional roast options.

This can get pretty dull for professional caterers who have to prepare the same meal hundreds of times over though.

So why not try adding something exciting and new to your restaurant's menu? Diners might appreciate a little variety too.

Our resident expert Chef Steve says that one of his key professional inspirations is researching the culinary traditions of other cultures - and it could be a good idea to follow his lead.

In an article for the Guardian, head chef of Faviken restaurant in Sweden Magnus Nilsson shared his recipe for woodcock with raw vegetables, sour onions and pickled rocket buds.

This could fit the bill perfectly - and there is no reason for chefs not to go one step further and adapt the dish with additional culinary herbs of their own selection.
