Make new dishes from Christmas leftovers

The nature of Christmas cooking means there are always plenty of leftovers such as turkey and roast potatoes.

Everyone could get fed up of making the same sandwiches for a week after the big day and professional chefs will no doubt face much more of a waste food problem then households.

However, why not take the excess of cooked ingredients at your disposal and turn this into more creative cuisine?

In an article for the Guardian, Angela Hartnett suggested using excess meat to make a Thai turkey salad.

All that is required is for the meat to be cut into strips and added to a bowl with cabbage, radishes and spring onion.

She also suggested a dressing of chilli, garlic and ginger with fish sauce, olive oil and red wine vinegar.

This could also help stem the nation's growing waste problem, as and estimated £12 billion a year is lost in food thrown away.
