When preparing new recipes for the restaurant's menu, it would be perfectly understandable for caterers to feel dispirited about a lack of inspiration.

There are so many great recipes out there - and many of them are old favourites and staple options that everyone seems to offer in some form.

One way of ensuring that your dishes will always stand apart from the crowd is to bring your own unique twist to them.

In an article for the Independent, celebrity chef Mark Hix recommended adding ginger to a mackerel broth, along with tomatoes and coriander.

Chillies were also among the ingredients, but broths are highly customisable - and alternate herb choices could be the perfect solution for this.

So don't be afraid to let your imagination run wild and see what you can come up with.
