East meets west with culinary spices

Culinary spices are very often associated with Asian dishes such as hot curries, even though they have plenty of other uses.

Indeed, McCormick's resident expert Chef Steve says one of his favourite characteristics of herbs and spices is the fact that they are so versatile.

However, caterers can use this association to their advantage and create unusual recipes that are likely to really impress diners.

For instance, celebrity chef Bill Granger recommended stuffing a whole sea trout with a mixture of chillies and ginger in an article for the Independent.

He explained that with a sprinkle of soy sauce, sugar and black pepper, it becomes: "East meets west at its most satisfying."

Preparation involved mixing chillies, ginger and lime zest together with lemongrass and stuffing into the belly of the fish.

An edamame salad was recommended as a side serving, which is characterised by a dressing of lime juice, mirin, soy, sugar and sesame oil.
