Cinnamon used in spiced mice butter cookies

Spices can be used in sweet recipes

Adventurous cooks do not have to reserve culinary spices for use in savoury dishes, as one recipe shows.

Writing for the blog Whipped, Caroline Lubbers described how to make spiced mice butter cookies.

These cute-looking treats use ground cardamom, ground cinnamon and allspice to flavour a mixture made from butter, sugar, flour, an egg and vanilla extract.

Once the ingredients have been mixed together, they are formed into oval, mouse-like shapes and given some character using sliced almonds for ears, currants for eyes and a small Chinese noodle for a tail.

They are then baked in the oven for 15 to 20 minutes until the mice are a golden brown colour.

"This is one sort of mouse most people won't mind finding in the kitchen," Ms Lubbers stated.

Earlier this month, the Edinburgh Evening News published a recipe for cinnamon and apple cake, which used spices, fruit and Demerara sugar to make a dessert perfect for Easter.
