Unusual ingredients could attract diners

There are many things a caterer can do in order to ensure your restaurant's menu is very distinctive and has something really different to offer diners.

Our resident expert Chef Steve is a big advocate of researching the culinary traditions of other cultures - as this is often a great wellspring of potential new ideas.

Celebrity chef Yotam Ottolenghi has published a cookbook entitled Jerusalem, which is inspired by the titular city he comes from - so adapting his approach could be a good idea.

In an interview with the Guardian, he suggested that the use of unusual ingredients is what makes people interested in food - even attributing this to his own success.

"If I didn't use more unusual ingredients, people wouldn't read me," Ottolenghi remarked, adding: "Every era has its own list of ingredients that are considered exotic and then, 15 years later, they're not."

So don't be afraid to try inventing new taste sensations with the adventurous use of culinary spices!
