Dill can make the perfect salmon patties

Herbs are great with seafood

One of the best ways for professional caterers to come up with new ways of making sure that their restaurant's menu offerings really stand apart from the crowd is to bring a new twist to old favourites.

Our resident expert Chef Steve says that one of the best ways to do this is by exploring the possibilities offered by culinary herbs and spices.

Celebrity chef Nigel Slater has claimed that dill is a great inclusion in the preparation of salmon patties.

Writing in an article for the Guardian, he added that he "can melt at the thought of salmon, a little dill and the cool scent of sliced cucumber".

While this is one excellent riff on the traditional marriage of salmon and cucumber, it could also be worth seeing if you can come up with anything new of your own.

Bay leaves often work well with seafood - and of course, simple salt and pepper are not to be overlooked!
