Use plenty of Asian spices for a curry

Plenty of spices are required for a rogan josh

Cooks will need a wide range of Asian spices if they wish to recreate Anirudh Arora and Hardeep Singh Kohli's lamb rogan josh recipe.

The celebrity chefs - who co-authored the Food of the Grand Trunk Road cookbook - revealed their ingredients for the dish in an article for the Guardian.

Preparation involved heating oil in a pan and infusing it with culinary spices such as cloves, cinnamon sticks and cardamom.

Onions are fried until they are golden brown, while lamb is seared at a high heat with garlic and ginger stirred in to the mixture.

Ground spices like coriander and turmeric are then introduced along with chilli powder, before finally putting pureed tomatoes and yoghurt in the pan until the meal is ready.

A similar dish chefs may wish to try and make is a Rajasthani lamb curry, which professional chef Reza Mahammad recently suggested in an article for the Independent.
