Use herbs for huevos rancheros

A variety of spices are required for the perfect huevos rancheros

Oregano and coriander are two of the culinary herbs used in a recipe for huevos rancheros.

Celebrity chef Stevie Parle, head chef of the Dock Kitchen in Notting Hill, shared his ingredients for this dish in the Daily Telegraph.

Preparation involved frying onion and garlic in a pan with chipotle and coriander until the onion turns transparent.

Next, tomatoes, bay leaves and cinnamon are introduced to the mixture, with oregano and more coriander added while the ingredients are gently cooking.

The resulting tomato sauce is then baked with an egg broken on top and left in the oven until the white is set but the yolk remains runny.

Mr Parle's final serving suggestion was to share among the required number of dishes with warm or toasted corn tortillas.

Bill Granger recently recommended the use of oregano to spice up a beans and eggs-based pulse dish in an article for the Independent.
