Pear and apple can make a savoury tarte tatin

Tarte tatin can be a savoury dish with thyme

Cooks thinking of how to incorporate culinary herbs into a savoury tarte tatin could use thyme to help flavour a pear, apple and goat's cheese recipe.

Professional chef and author of two cookery books Alice Hart recommended this dish in an article for the Daily Telegraph.

To prepare, she advised making caramel by heating sugar in a tatin tin until it turns to liquid, adding butter and vinegar and allowing to bubble slightly.

After removing the mixture from the heat, walnuts and thyme are sprinkled on top and fruit is arranged over this with goat's cheese.

Pastry is then rolled and used to cover the rest of the ingredients, which are sealed in the dough and baked for half an hour.

Joanne Todd, head pastry chef for five-star London hotel the Royal Horseguards, recently suggested the use of Chinese five-spice in a sweet banana tarte pudding dish in the Daily Telegraph.
