Chilli competition heats up

Traditional Chili is made only from red chillies

A community in North Carolina is gearing up for some adventurous recipes ahead of its first 4-H Chilli Cook-off. 

Accepting either the traditional red chilli, which makes use of red peppers, or chilli verde, with contrasting green peppers, the event's organisers have laid down the ground rules, according to the Daily Journal.

"You may cook either of these varieties or your favourite spin off," explained an event organiser, Michelle Stumbo. 

Last year's winner of the International Chilli Society's worldwide cook-off scorched judges' taste buds with his combination of chilli powders from California and New Mexico mixed with cumin, garlic granules and onions. 

Entrants into the upcoming competition will be awarded during blind taste tests on texture, flavour, consistency, aroma and colour. 

Following the judges ruling, where first and second winners are announced, the chilli can be distributed to the public who will select a chef for the people's choice award. 

Ms Stumbo encouraged entrants to be creative with their cuisine.

"Anyone can participate. This is open to the public," she said, adding: "We wanted to try something new."
