Chef recommends herbs and spices when cooking seafood

Herbs and spices can bring seafood to life

A seafood chef has given some top tips on how to cook fish, recommending herbs such as parsley and spices like paprika to create inspirational recipes.

Andre Kimbrough from Mona's Fish Market and Restaurant in Milwaukee in the US said seafood is best when it's just done.

Speaking to the Journal Sentinel, he explained that salmon should flake easily and scallops should be firm and not spongy.

"For perfectly cooked fish, you want to take it out a little under," he remarked. "It will continue cooking."

Offering his recipe tips, Mr Kimbrough said salmon tastes great coated in a crust of almonds, parsley and grated parmesan and served with sweet chilli sauce.

For scallops, he suggested coating them in sesame seeds and searing them until they're golden brown.

He also recommended using a mixture of herbs and spices, including coriander, paprika and cumin, with meaty fish like snapper.

The chef claimed that learning to cook great seafood takes time, but insisted that practice makes perfect.
