Herbs define a sumptuous Sicilian pasta dish

Garlic is a staple ingredient in many pasta dishes

Caterers worried their clientele will get bored of their pasta dishes could turn to culinary herbs to create new flavours for the dishes.

These ingredients can help bring new twists to old staples and using them can also inspire new ideas that can translate to other meals.

McCormick's resident expert Chef Steve says one of his favourite things about herbs is their versatility and relevance to a range of offerings.

He also recommends researching the culinary cultures of other traditions, but why not combine the two approaches when preparing courses?

Writing in the Guardian, Yotam Ottolenghi, chef and patron of Ottolenghi and Nopi in London, suggested the use of garlic, parsley and saffron in a roasted cauliflower gigli with pine nuts and currants.

Preparation involved sauteing onion and celery with roasted cauliflower and garlic, stirring in to pasta with capers, pine nuts and a currant mix for a "sumptuous" Sicilian dish.
