Dont shy away from festive breakfast options

Cinnamon can make a festive smoothie

Christmas is a hugely busy time of year for professional caterers as diners pile into restaurants to enjoy traditional seasonal dishes.

However, while the occasion is clearly most closely associated with a massive roast dinner, there is no reason why chefs should not try and bring a festive touch to some of their other menu options.

For instance, celebrity chef Nigel Slater claimed that this is the only time of year when he feels that he should really put some effort into breakfasts.

"This is a time of feasting, when everyone expects - and I feel should get - something they wouldn't normally have at any other time," he commented in an article for the Guardian.

Warm cranberry and apricot granola was one of his suggestions - or pancakes with smoked eel and wasabi could be another option.

He also recommended serving a special Christmas smoothie by blending cranberries, blueberries and raspberries with apple juice, yoghurt and a pinch of cinnamon.
