Herbs can be a brilliant addition to bruschettas

Bruschetta is a kind of Italian dish that is not as well known as things like pizza, lasagne or pasta - but they could still turn out to be a big hit with diners if you do not already offer them on your restaurant's menu.

In an article for the Independent, head chef at London's Polpo restaurant Florence Knight recommended making a broad bean, mint and ricotta variety.
