Culinary spices vital for chutney

Culinary spices are ideal for adding extra flavour to homemade chutney, one celebrity chef has explained.

According to Rozanne Stevens, writing for the Irish Independent, cooks should "experiment" with a wide variety of ingredients to find the recipe that is ideal for them noting cayenne pepper, dried mustard, ginger, cinnamon sticks and cloves can all be used to add some zest to basic chutney.

Ms Stevens, who writes a regular column for the newspaper's Health and Living Supplement and also hosts cookery classes at Ireland's Cooks Academy in Dun Laoghaire, argued homemade chutney is "a far superior condiment to many shop-bought sauces and relishes" as it contains "no preservatives, additives or nasty chemicals".

Her basic recipe requires 2kg of various fruits and Ms Stevens, who is South African but has lived in Ireland for over a decade, also suggests making curried tomato chutney, which requires 2kg of tomatoes and can be given more flavour by adding curry powder.
