Culinary herbs useful for sardine dishes

Sardines can be spiced up with saffron

Culinary herbs and spices can be used to prepare a range of sardine dishes, one food expert has claimed.

Diana Henry, who writes for the Sunday Telegraph and has published six cookery books, explained in her column for the newspaper that the fish can be served with saffron, spaghetti and currants.

In addition, chefs can prepare the Spanish dish of escabeche, which consists of fried sardines pickled in a mixture of spices, herbs and vinegar.

Ms Henry - whose cookbooks include Food from Plenty and Cook Simple - said the fish is "relatively cheap and good for you" but said it is important to use it correctly.

"As is often the way with food, sardines are good with ingredients that either echo their most distinctive characteristics or contrast wildly with them," she noted.

Salmon is another versatile fish that can be given extra flavour with the use of culinary spices such as coriander and curry powder. Dishes can be prepared by either oven cooking, smoking or grilling the fish.
