Cinnamon and ginger beef up rice noodle pho recipe

Try using cinnamon in a sauce for rice noodles

Cooks looking for savoury flavour ideas for cinnamon could consider incorporating it into a sauce for rice noodle pho.

This is what chef Bill Granger recommended in a recipe he shared with the Telegraph.

He described the dish as "a great way to make good-quality steak go a bit further" and "the perfect one-bowl dinner".

Mr Granger suggested marinating a steak in soy sauce, honey, fish sauce and a pinch of salt.

To prepare a soup he advised using stock, half a litre of water, ginger, lime juice, fish sauce sugar, star anise and a stick of cinnamon.

When serving the meal, he said to divide prepared rice noodles and pak choi between bowls, ladle in the sauce before topping with slices of chilli, basil and the sliced steak.

The self-taught chef, whose recipes have appeared in books and television shows such as Bill's Tasty Weekends, finally recommended the meal to be eaten with a bottle of chardonnay.

He opened his first restaurant in 1993, when he was 22.
