Try unusual spices in a curry

Cinnamon can create a memorable curry

Curries are defined by their distinctive use of culinary spices, with the ingredients of staple dishes such as kormas easily identifiable by diners.

This familiarity with other cultures can only be commended - and McCormick's resident expert Chef Steve says researching the culinary traditions of other countries is a key source of inspiration to him personally.

However, why not keep diners guessing with unique recipes of your own invention?

Bringing unusual flavour pairings of spices together in a meal can create some truly memorable meals that have your own stamp on them and will really set your menu apart from the crowd.

In an article for the Daily Telegraph, owner and head chef of the Dock Kitchen in Notting Hill Stevie Parle recommended the use of cinnamon in a coconut and potato curry.

Anchovies were also included and are quite common as a seasoning in Sri Lankan dishes - which is where this particular meal has its origins.
