Roasted Brussels & Apples with Fennel & Sage

- 2 tbsp Olive oil
- 1.2 kg Prepared Brussels sprouts
- 2 tbsp
- 2 tbsp Fennel Seeds
- 5 Red apples, cored and cut into chunks
- 60 grams Walnut pieces
- 2 tbsp Sage


Pre-heat the oven to 200°C, 400°F, Gas Mark 4.

Toss the olive oil, Brussels sprouts, Chopped Garlic in Oil and Fennel Seeds together, transfer to a baking tray and roast in the oven for 20 minutes.

Remove from the oven and add the apple, walnut pieces and Sage. Toss to gently coat all the ingredients and pop back in the oven for a further 10 minutes, or until the apples and Brussels sprouts are tender.

Delicious served with leftover turkey.
