Potato Pancakes

- 2 tbsp oil
- 2 small onions, finely chopped
- 875 grams mashed potatoes
- 2 medium eggs, beaten
- 60 grams plain flour
- 8 tbsp milk
- 1 tsp Ground Black Pepper
- Sea Salt to taste
- Oil for frying


Heat the of oil in a frying pan and fry the onions until browned, mix into the mashed potatoes with the eggs, flour, milk, Pepper and salt.

Divide the mixture into 20 and press into pancake shapes.

Heat some oil in a frying pan and fry a few pancakes at a time for 1-2 minutes on each side until golden. Great topped with crispy bacon and fried egg.
