Mixed Vegetable Curry


- 700 grams potatoes, diced
- 250 grams carrots, diced
- 8 tsp oil
- 2 large onions, chopped
- 2 tsp Ground Turmeric
- 5 tsp Ground Cumin
- 5 tsp Ground Coriander
- Cayenne Pepper a good pinch
- 5 tsp Garlic Granules
- 250 grams courgettes, diced
- 1 kg tin tomatoes
- 250 grams frozen peas
- Sea Salt


Parboil the potatoes and carrots for 10 minutes until just tender. Drain.

Heat the oil and fry the onions until softened. Add the Schwartz for Chef spices and fry for another 2 minutes.

Stir in the potatoes, carrots, courgettes and tomatoes. Simmer for 10 minutes until tender.

Stir in the peas and salt and cook for another 5 minutes before serving.
