Mediterranean Roasted Vegetables


- 5 red onions, sliced
- 5 courgettes, thickly sliced
- 2 red peppers, cut into chunks
- 2 orange peppers, cut into chunks
- 5 tbsp olive oil
- 5 tsp Mixed Herbs


Pre-heat the oven to 220°C, 425°F, Gas Mark 7.

Place the vegetables in a roasting tin. Drizzle with olive oil and toss to coat all the vegetables. Spread the vegetables out across the tin. Roast for 30-40 minutes until the vegetables are tender.

Sprinkle with Schwartz for Chef Mixed Herbs and serve.
