East African Fresh Tomato & Cucumber Salad

Number of Portions


- 2 red onion, chopped
- 200 grams cucumber, chopped
- 125 grams carrot, grated
- 2 tsp Schwartz Sea Salt
- 1 lt water
- 150 ml lime juice
- 4 tbsp extra-virgin olive oil
- 2 tbsp honey
- 1 tbsp Schwartz Garlic Granules
- 1/2 tsp Schwartz Coarse Ground Black Pepper
- 675 grams tomatoes, chopped seeded
- 4 tbsp coriander, chopped


Mix onion, 1 tsp of the Sea Salt and water in medium bowl. Let soak 10 minutes, then drain well.

Whisk lime juice, oil, honey, Garlic Granules, pepper and remaining ¼ tsp Sea Salt in large bowl. Add drained onion, tomatoes, cucumber, carrot and coriander, toss well. Cover and refrigerate until ready to serve.

Serve as an accompaniment to Tanzanian BBQ Skewers with Tomato Onion Sauce
