Spiced Duck with Orange and Fennel


- 2 tbsp Deep South Brown Sugar
- 5 duck breasts – skin removed
- 2 oranges - zested and juiced
- 2 tbsp oil
- 1 tsp fennel seeds


Mix together the orange juice, zest, oil, Deep Brown Sugar and fennel seeds to make a marinade.

Add the duck, ensure it is covered and leave for at least 30 minutes. Remove the duck from the marinade. Place the marinade in a small pan and bring to the boil to reduce to make a sauce to serve with the duck.

Grill the duck until it is cooked as desired.
