Pork Fillet with Apricot Stuffing and a Pepper Crust

- 2 tbsp Montreal Steak
- 5 portions pork fillets approx 150g each
- 50 grams dried diced apricots
- 50 grams breadcrumbs
- 2 pork sausages skinned
- 2 tbsp oil


Mix the apricots, breadcrumbs and sausage meat together to make the stuffing and season with a few pinches of the Montreal Steak Seasoning.

With a sharp knife cut a slit down the centre of the pork making it into a tube. Fill with the stuffing and then mix together the oil and the rest of the Montreal Steak Seasoning and brush over the pork.

Grill or roast until cooked, serve with a sauce of your choice.
