Texan Hollandaise sauce

- 1 tsp Smokey Texan Seasoning
- 2 egg yolks or 40g pasteurised egg yolk
- 250 grams butter
- Squeeze of lemon


Put the egg yolks and squeeze of lemon in a food processor and blend for 1 minute.

Warm the butter in the microwave and pour over the egg yolks in a slow, steady stream while the processor is on a medium speed.

Add the Smokey Texan Seasoning and serve with steak and fries or fish.
