Fish Risotto


- 2 tbsp oil
- 2 onions, chopped
- 2 red peppers, diced
- 2 green peppers, diced
- 1 kg risotto rice
- 2 water
- 1 sachet
- 600 grams cod, diced
- 600 grams salmon, diced
- 300 grams mushrooms, sliced


Heat the oil in a pan and sweat off the onions and peppers for 5 minutes.

Add the risotto rice and ½ the water. Bring to the boil, then simmer gently until the water has nearly evaporated.

Add the remaining water, Mediterranean Herb Recipe Mix, fish and mushrooms. Continue to simmer until all the water has evaporated.


Serving Suggestions: Green salad, peas, sweetcorn, broccoli, green beans, asparagus, broad beans.
