Piri Piri Chicken Panini

Number of Portions


- 1 Chicken breast, skinned and bones removed
- 1 tbsp Piri Piri Seasoning
- 2 tbsp olive oil
- Salt and pepper
- 4 slices of Mexican cheese
- 1/2 red onion
- 2 scotch bonnet peppers
- 1/2 cucumber
- Fresh coriander (to taste)
- Chilli (if desired)
- Root ginger (if desired)
- Crème fraiche


Place chicken in an oven proof dish with seasoning and oil. Mix the Piri Piri seasoning together ensuring everything is combined. Place in oven for 20 minutes or until cooked through.

Slice chicken, once cooled, in half. Then slice each half into appropriate size chunks.

Thinly slice the red onion and soften in a little oil with a sprinkling of sugar and salt.

Place the chicken along a Panini roll. Top with cheese and onions.


Mix together a little more olive oil and Piri Piri seasoning and drizzle over the Panini. Close and place in a Panini press. Remove and fill with lettuce before serving.
