Mexican Chicken Pizza


- 10 x 8 inch cheese and tomato pizzas
- 5 chicken breasts, skinless and boneless, cliced
- 4 red peppers, sliced
- 2 green peppers, sliced
- 2 red onions, sliced
- 2 tbsp oil
- Fajita Seasoning


Place the sliced chicken in a large bowl. In a small bowl, mix together the Fajita Seasoning and the oil and pour over the sliced chicken. Mix thoroughly so the chicken is evenly coated.

Heat a large frying pan until very hot. Add the chicken and pan fry until cooked through, around 8-10 minutes.

Top each pizza with equal amount of chicken, peppers and red onion and bake in a hot oven until cooked.


Substitute the chicken for minced beef. Dry fry 1kg of minced beef until fully cooked and sprinkle over the Fajita Seasoning. Cook for a further 5 minutes and top the pizzas as before.
